Bonito Stew

(Palamut Pilaki / Yahni)

1 Horse Mackerel (Bonito) fillet, gutted, washed with cold water

1 medium size onion, sliced
1 small carrot, peeled, grated
2 Bay leaves
1 small tomato, sliced
4-5 tbsp extra virgin olive oil

Season the fillet of the fish with salt and pepper. Place some onion rings, Bay leaves and grated carrots on the casserole dish. Place the fish on top. Sprinkle the carrots over the fish. Place the tomato and onion slices over the carrots. Sprinkle some peppercorn and drizzle extra virgin olive oil all over them.

Preheat the oven to 350 F (180 C). Cook for about 30 minutes on the middle rack. Discard the Bay leaves. Serve while still warm with the lemon wedges.
