Chicken Saute with Mushrooms
(Mantarli Tavuk Sote)
1 chicken breast, cut in medium sized cubes
1/2 cubanelle pepper, cut in medium sized chunks
4 mushrooms, brushed, sliced
3 green onions, cut in medium sized chunks
1 garlic clove, sliced
1 large tomato, grated
2 tbsp extra virgin olive oil or butter
1 tsp half & half cream
1 pinch oregano
1 pinch crushed red pepper
Cover the chicken pieces with water in a medium sized pot and cook over medium heat. When a little bit of water is left, add the above ingredients except the cream, oregano and crushed pepper. Cook for about 15-20 minutes over low heat.
Add the cream, oregano and crushed red pepper, stir and turn the heat off.
