Hi. I'm so glad i've found this site now as my partner is turkish and i'd really like to be able to cook some authentic meals for him. I'm trying to find a recipe for mendane borek (i'm not sure this is spelt right!) and also different types of kofte. If you can help that would be great.. Thanks

Thank you:) Merdane means roller in English. It's been used to make a dough (yufka). We make Borek with yufka so I've already posted a few Borek recipes. Please check Turkish Pastry Recipes section to find which Borek you would like to make, here is the address;
I am going to post one or two different kinds of kofte recipes within a few weeks:)

Merhaba Fatma,
Kuru erik ile marmelat yapabiliırsın. Erikleri, uzerini gececek kadar su ile yumusayana kadar pisir. Kevgirden gecirdikten sonra, ayni miktarda seker ile kivamini alana kadar pisir. Ocagin altini kapamadan bir kac dakika once limon suyu ilave et. Afiyet olsun.

we have just come back from trukey and i am trying to find the recipe for the chilli salsa served with bread at the start of a meal. I am sorry i do not know the name of this particular dish
