Flat Beans in Olive Oil

(Zeytinyagli Yesil Fasulye)

Flat Beans in Olive Oil
500 g flat beans, wash, trim both ends
50 ml extra virgin olive oil (half for cooking, half for after cooking)
1 small onion, chopped
1 garlic clove, chopped
1 tbsp sugar
2 tomatoes, peeled, diced
1 tbsp canned crushed tomatoes
1 1/2 cups warm water

Saute the onion and olive oil for 3-4 minutes in a medium size pot. Add the beans, tomatoes, crushed tomatoes, garlic, sugar and salt. Pour in 1 cup of water. Leave the lid half open and cook for 35-40 minutes or until they are tender, and add another half cup of warm water midway through. If needed, you can add more warm water later.

Let it cool down in the pot. Then, place on a serving platter. Pour the rest of the olive oil. Keep it in the fridge. Serve Flat Beans in Olive Oil chilled or at room temperature.

Mixed Vegetables with Beef

1 medium size eggplant, cut bite size
3 medium size white potatoes, cut in pieces
1 small zucchini, in chunks
1 medium size onion, sliced
2 garlic cloves, sliced
3 fresh green onions, cut in pieces
1 cubanelle pepper, chopped
1 large tomato or 2 tbsp crushed tomato
1/4 cup extra virgin olive oil
4-5 tbsp medium ground beef or 1/2 cup cube beef
Black pepper

Soak the eggplant pieces in water with salt for 15 minutes. After taking them out, squeeze the eggplants to get rid of the water inside.

Cook the ground beef or cube beef in a pot. Then wash and cut all the ingredients above. Add in the potatoes, onion, salt and pepper and a cup of water. Cook for about 15 minutes on medium heat. Add the rest of the ingredients and continue cooking for another 20-25 minutes. If necessary, add more hot water.

Serve as a main dish with rice on the side (for example, Rice with Orzo).

1 cup bulgur wheat, large grain
60 ml olive oil
1 onion, diced
1-2 tbsp tomato paste
1 lemon juice
1/2 tsp salt
1 tbsp cumin

First put the bulgur in a large bowl and pour two cups of hot water on it (it should stay like this for 5 minutes). Meanwhile in a medium sized pot, place the onion and olive oil. Cook until the onions turn light brown. Add the salt, tomato paste, lemon juice and cumin.

Then wash and drain the bulgur, and mix it into the pot with a wooden spoon. Cook for about 10 minutes on medium-low heat. Afterwards, cover and set aside for it to cool down.

When it's cold, add in the following:

3-4 tomatoes, diced
4-5 fresh green onions, diced
1 cup chopped parsley

Toss and serve. This recipe goes well with Ayran. Keep refrigerated as Kisir is best served cold.

Pilaf with Orzo

(Şehriyeli Pilav)

Pilaf with Orzo
3/4 cup long-grain rice
3 tbsp orzo (check the pasta aisle)
1 cup hot water or chicken stock
2 tbsp butter
1 tsp salt
Pinch pepper

Wash the rice several times with warm water and drain. Then cover the rice with hot water and leave for about 15 minutes, then drain. Place the orzo in a medium sized pot. Stir continuously on medium-low heat, until the colour turns light brown. Add the butter and rice in the cooking pot. Saute the rice with butter for 2-3 minutes while stirring. Pour 1 cup of hot water or chicken stock in it. Season with salt and pepper. Turn the heat to low. Cover and cook until the rice absorbs all the water.

Take the cooking pot away from the heat. Open the lid, place a clean kitchen towel across the top of the pot on the rim and put the lid on it. Let the Pilaf stand for about 5 minutes. We call this brewing time. Then serve.

Grape Leaf Rolls with Groundbeef

(Etli Yaprak Sarmasi - Ottoman Kitchen)

Grape Leaf Rolls with Groundbeef
1 lb grape leaves, washed one by one

3 tbsp crushed tomatoes
60 ml butter, diced

1 1/4 lb medium or regular ground beef, uncooked
1/2 cup rice, washed and drained
1/4 cup water
50 ml extra virgin olive oil
1 onion, finely chopped or grated

Garlic Yogurt Sauce:
1/2 cup yogurt, plain
1-2 garlic cloves, mashed with salt

Mix all the filling ingredients in a bowl with a tablespoon. Fill a large pot half way with water and boil. Add in all the leaves and boil for about 2-3 minutes. Drain, then cut off the stems (picture). The matte (not shiny) side of the leaf is the inside, that's where the filling will go. Grab a leaf (picture) and fold the top as shown in the picture. Put the leaf into your palm and use a teaspoon to put filling on it (picture). First fold over the top (picture), then the two sides (picture) and roll to close it up (picture).

Line up all the rolls in a large pot tightly, without big holes in between (picture). Spread the sauce on top. Put a small plate upside down over the rolls - this is to prevent the rolls from unfolding while being cooked. Then pour in a cup of water (picture). Cook on medium-low heat for 20 minutes. Add 1 1/2 cup of hot water, and cook for another 15 minutes. Let cool for 10 minutes, then serve with Yogurt with Garlic Sauce.

"Dolma" is a Turkish word which means "stuffed" in English. You can make "dolma" with pepper, tomato, zucchini, eggplant, fish, apple, etc.

"Sarma" is also a Turkish word means "rolled up" in English. You can make sarma with grape or mulberry, cherry, cabbage, swiss chard, kale, bean's leaves, etc.

So, sarma shouldn't be called dolma, they are different:)

Yogurt (Plateau) Soup

(Yayla Corbasi)

Yogurt (Plateau) Soup
6 cups water
1 cube beef bouillon
1/2 cup rice, washed and drained
2 cups yogurt, plain
1/2 cup milk
1 egg yolk
1/2 cup flour, all purpose
2 tbsp butter
1 tbsp dry mint

In a large pot boil the water, rice, salt and bouillon. Cook at medium-high, until the rice is done.

Meanwhile in a bowl, mix yogurt, milk, egg yolk and flour. After the rice is cooked, take a few spoons of liquid from the pot and mix into the bowl. Then slowly pour your mixture into the pot while stirring very slowly. Cook for 10 more minutes at low heat.

Place the butter in a frying pan. When it begins spitting, stir in the mint and pour into your soup.

Serve immediately. Makes 4 servings.

1 clove of garlic, minced with salt
1 cup cucumber, diced
1 1/2 cup plain Tukish yogurt
1 cup water

Extra virgin olive oil
Fresh dill, chopped

Place the garlic, yogurt and water in a medium size bowl. Mix with a spoon until it is blended very well. Add diced cucumber and mix again. With a ladle pour into small bowls. Drizzle some olive oil on top of each. Garnish with fresh dill.

Cacik goes very well as a side dish with white beans, rice or chickpeas.

Sesame Seed Rings

(Susamli Simit)

Sesame Seed Rings
125 ml salted butter (room temperature)
125 ml unsalted butter (room temperature)
50 ml extra virgin olive oil
4 tablespoonful (~1/4 cup) Turkish plain yogurt
1 tsp baking powder
3 cups flour (use fine strainer)
1 egg yolk
1 tsp mahlep

Sesame seeds
1 egg white

First, pre-heat the oven to 375 F (190 C). Put all the ingredients in a large plastic bowl. Use your hand to mix them well. Grab some dough the size of a little ball and shape it like a ring, with the diameter being approximately 2 inches.

First dip (only one side) in the egg white then in the sesame seeds. Place on a baking tray. Repeat for the remaining dough and then bake for 30-35 minutes or until the tops take a light pink colour. This recipe will make 36 pieces.

Best served with tea or milk.

Mahlep is obtained from the fruits of the Idris Tree. It is used in a variety of dishes including Kandil Simidi. It also keeps the food fresh and makes it brittle.

Zucchini Pate


Zucchini Pate
1 medium size zucchini, washed
1/2 cup crumbled feta cheese
2-3 green onions, chopped
1/2 cup parsley, chopped
1/2 cup fresh dill, chopped
1 tbsp flour
2-3 garlic cloves, chopped
1 2 eggs
1 tsp baking powder
Black pepper

First grate zucchini and then squeeze with your hands to get the water out. Then add all the ingredients above, with the egg going in last (as it quickly makes the mixture watery quickly). Mix with a wooden spoon.

Pour some sunflower oil in a large skillet, about 1 cm deep. When the oil warms up, take a lump of the mixture (a couple large spoons' worth) and put in the skillet. Fry each side approximately 3 minutes at medium-high heat. When done, put the pieces on a plate with a paper towel to soak up extra oil.

Serve with a bit of yogurt on top of each piece - yogurt with garlic especially goes well. Mucver can also be a great sandwich for lunch:) I highly recommend it.

Sweet Butternut Squash

(Kabak Tatlisi)

500 gr butternut squash
1/2 cup granulated sugar
1-2 tbsp water

Crushed pistachio or walnuts

Cut the squash in chunks a bit larger than bite-size. Place them in a medium pot. Add sugar and water. Cook on low-medium heat until soft, for about 25-30 minutes without the lid on. You'll know they're done when the water has been mostly drained and the colour of the squash darkens and they looks somewhat shiny.

Place on serving plate and let cool, then garnish with the pistachio or walnuts and serve.

2-3 servings.

Pilaf with Lamb

(Etli Pilav)

Pilaf with Lamb
2 lamb shanks
1 cup rice, rinsed
4-5 green onions, cut into little pieces
2 medium-size tomatoes, diced
Salt, pepper
2 tbsp butter, diced

First, place the lamb shanks in a medium-size pot. Cover with water and cook at medium-high for 35-40 minutes. Then, separate the meat, discard the bones, strain and put aside the remaining stock for use later.

Spread the rice in a shallow pan/large skillet. Place the lamb pieces between the rice equally. Arrange the tomatoes, green onions, butter, salt and pepper around the lamb. Then, take the stock from before and pour it over. The stock should be 1 3/4 cups; if not, you can add water. Keep the lid half covered and cook at medium-low heat for 20-25 minutes until the rice is cooked (water should be completely absorbed).

Serve with Shepherd's Salad on the side.

Shepherd's Salad

(Çoban Salatası)

Shepherd's Salad
1/2 cup cucumber, diced
2 tomatoes, diced
1 cubanelle pepper, chopped
1/4 red onion, sliced
1/4 cup fresh mint, chopped

2-3 tbsp extra virgin olive oil
50 ml feta cheese, crumbled

Place all the vegetables in a medium size salad bowl. Season with salt and pepper to liking. Add the feta cheese, lemon juice and olive oil. Don't add any other dressings!

This salad goes very well with lamb dishes.

3 cup plain Turkish yogurt
1/2 cup water
1 tsp salt

This is very straight-forward but tastes great: Put all of the above in a blender. Mix for about 35-40 seconds. Pour into glasses. Also after blending, at the top, you will see bubbles and that's the best part. Makes 4 portions.

Origins of the word "yogurt":
The word comes from the Turkish word "yoğurt", deriving from the verb "yoğurtmak", which means "to blend" - a reference to how yogurt is made.
